Like any good residents of Los Angeles, we enjoy going to brunch some weekends. On one such outing, Kale and I discovered what is now Our Favorite Salad at The Misfit in Santa Monica. We’ve started making a variation at home, and I made it for dinner tonight.
Kale Quinoa Salad
Ingredients: 1 bag kale, 1 cup quinoa, 1 red pepper, 2 green onions, grapes and/or pomegranate seeds, 1 lemon, olive oil, manchego cheese, Parmesan cheese, sunflower seeds
Cook quinoa and cool in refrigerator. Place kale in large salad bowl. Dice red pepper, chop green onion, slice grapes (if using), grate cheese to desired amounts. Use desired amount of cooled quinoa and sunflower seeds.
